Budwig cream

Also known as the Kousmine breakfast, the "morning delight" or the "cream of the century", it was created by Johanna Budwig and was adopted and popularised by Dr Catherine Kousmine, who introduced it into her patients' menus within the framework of a fundamental nutritional and therapeutic shift.

Composition, properties, recipe

It consists of raw and natural food and provides all the nutritive elements required (proteins, slow-release and other carbohydrates, vitamins, minerals, good essential fatty acids), taken early in the day when we should 'breakfast like a king'!

For 1 person:

  • 4 teaspoons of low-fat fromage blanc (or for those with an intolerance/allergy, ewe's-milk, soya or tofu yoghurt)
  • Juice of half a lemon
  • 2 teaspoons of linseed, camelina, walnut or wheatgerm oil, guaranteed first cold press
  • 1 or 2 teaspoons of organic freshly-ground oil seeds (alternate between linseed, sunflower, sesame, almond, walnut and hazelnut)
  • 2 teaspoons of freshly ground cereals (alternate between barley, oats, whole grain or semi wholegrain rice, millet, untoasted buckwheat)
  • 1 small very ripe banana or 2 teaspoons of good quality honey
  • Seasonal fruit (except over-acid citrus)

In a bowl, whip the 2 teaspoons of oil into the fromage blanc (or other) with a fork to form an emulsion.

Crème Budwig

Add the banana crushed with a fork or the honey, followed by the lemon juice. Then add the oil seeds and ground cereals. Finally add some seasonal fruit, either whole or cut up depending on their size.

Important!
Never use a mixture of cereals. Only use one cereal at a time! 
Never use raw wheat or rye; too high in gluten and with a demineralising effect when uncooked.
Never use cereal flakes.

Instructions for use

  • Soak the oil seeds and dried fruit overnight in spring water for easier digestion.
  • In the event of constipation: choose oats, then barley, sesame or linseed, linseed or walnut oil.
  • In the event of delicate intestines: choose ground buckwheat with almonds then rice, with sunflower oil.
